I have a new favorite spot in downtown Phoenix, Dust Cutter in the Renaissance Hotel. One of the top places I’ve eaten at this year.
Dust Cutter…what’s in a name? The name comes from the strong drink the Cowboys would order when they came inside after being out in the dust of the desert, a drink that would cut the dust taste in the mouth.
The cozy space on the main floor of the Renaissance Hotel is a combination of western cowboy, leather, and industrial metal.
The menu contains a variety of smaller dishes and a few entrees all with a southwest influence and many local ingredients. From the entrees, we selected the Mary’s Chicken and Mesquite Waffles and Grilled Wild Isle Salmon. That chicken…yum. So tender and juicy covered in a crispy layer with a warm bourbon maple syrup.
For me? I went for the The Cutter with Four Roses Bourbon, Ramazzotti amaro, Aperol, and lemon juice.
And don’t forget to order the Avocado Fries, you will thank me.
